Spiced Apple Bread

I really like carbohydrates.

I crave them.  They’re what I crave.


I also really like quick breads.  Because they’re quick.  Food that uses the fast track to my mouth is the best food.

You know that thing of when you’re poor, and you don’t like your food to go to waste so you think about baking it?  I’ll be the first to raise my hand, because I’m poor, and because I bake.  Mostly poor.

This idea came about because I had some apples that were about to go bad in my fridge.  So naturally I thought with my emotions and baked them into a quick bread.  It’s quick and I can be eating something baked in about an hour and a half.


Basically, this recipe is modified Zucchini Bread.  The first time I made this, I had Honeycrisp apples on hand.  This time I  used Fuji because Joy the Baker taught me that they’re good for baking and have a honeyish taste, but you can use whatever kind you’d like.

I feel like the best parts of this bread are the spices.  I have this impulse that whenever a recipe calls for cinnamon, I have to put in nutmeg and cloves.  I think it’s my obsession with Pumpkin Pie.  It’s not good unless it tastes like pumpkin pie.  I added a little cardamom, which gives it a sweet peppery taste.


Spiced Apple Bread

Yields 2 loaves

2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1 Tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1/2 teaspoon cardamom (optional)
3 eggs
3/4 cup brown sugar
1 cup granulated sugar
1 cup grated apple (about one apple)
2 cups chopped apple (about two apples)
1 Tablespoon vanilla

In a medium bowl, combine all dry ingredients and whisk together.  In a large bowl, combine all wet ingredients, except chopped apples, and whisk together.  Add dry ingredients to the large bowl and mix until blended.  Add chopped apples and mix until combined.

Pour batter evenly into two greased bread pans.

Bake at 350 degrees for 50-60 minutes

Place on cooling rack and let them cool in the bread pans for 15 minutes.  Remove from bread pans and let cool for another 15 minutes.


Cut a slice, slap some butter on that bad boy, and PUT IT IN YOUR MOUTH!
